Grilled Tilapia with Peach BBQ Sauce

I am not a big fish person, but I know I need to work it in our meals once in awhile. This fish is great without a fishy taste, of course I love it with the beer-batter and dipped in a mayo sauce, but really I might as well have a big steak dinner, cause the calories would be way worse with the fish prepared that way. This recipe was simple, and a great dinner if anyone has had a busy day. I served this with brown rice and steamed broccoli. Way to go Miss Paula, it had a great flavor.

Chicken Scaloppini

This meal had me interested to try just by its name, I'm still not sure what it means, but the meal tastes like a chicken picotta. I was very concerned about using a pound of butter in the lemon sauce, but if I'm doing Miss Paula's recipes I have to follow it like she made. The taste was what you would have expected, GREAT! I was able to find at the local, non-chain grocery store the chicken breast that were pounded down already. That just means a thin breast filleted to a flat size.

Spicy Orange Grilled Chicken

Well in the midwest this year looks like we went from and cooler summer right into winter. So for this dish I used an indoor cast iron grilling pan that fits over two burners, it was a little bit messier that cooking on the grill, but so worth the great flavor. If you have a wonderful husband, that I've been blessed with he just cleaned the stove off right away. I love these dinners that you prepare in a resealable bag, and then at dinner time its ready to cook. I served this with a salad.

B.L.T. Salad

Simplicity at its best.......Who doesn't love a B.L.T. sandwich? I usually make those on a hot summer day when I don't want to have the oven on. Our family trys at least once a week to have a salad be the main entree. So last night I made a very simple but tasteful one. I did use fresh bacon, the recipe calls for the little can of bacon, which is also real bacon but just like the idea of cooking it up. Thanks Miss Paula!

Taco Meat Loaf

I took this whole meal from Miss Paula's recipes, and were they good! Nothing to fancy, but yet a change-up on another well loved comfort food...meatloaf. My side dishes were easy also, but real flavor, there is nothing like real mashed potatoes, and the vegetable served was zucchini & squash saute. While the meatloaf was cooking I prepared the two other dishes, and they were all done about the same time. The only thing I would do next time preparing this same meal is a little less chipotle

Chicken-Pesto Calzones

Ok, this one was hardly homemade, but boy oh boy...it was good, quick, and easy. At the begining of a week its just what I wanted, simple and pretty much all store bought ingredients (nothing but assembly). This recipe was a usual family size portion, not a week of left-overs. I put this meal together in about fifteen to twenty minutes, and served it with a salad with alot of cut up veggies. I did make a vinegarette dressing. Thanks Miss Paula, for your taste of fast food.

Chinese Chicken Casserole

This one seemed like alot of work, to come home and prepare after a busy day. The flavor was great, so I guess next time I'd just make it on the weekend. There is many components to this recipe, and almost seems like to many things in one dish. The taste is worth it. Miss Paula knows her recipes and it was very nice to have different tastes going on than the same old flavors we probably all over use. I've never used sesame seed oil before, so I'll have to keep finding dishes that use this.

Jambalaya

If you're ready for a little heat, and who in the mid-west isn't looking for that in our pre-cold weather. It has been pretty chilly the last couple of days and the gathered at my house said, "This is the perfect dish for this weather". There is just a little heat to it, but my concern is it said it served 4 to 6 people and we had four eat 1 cup servings and there is still enough for at least four more. I made this in the morning, and just warmed it back up before dinner time.

Chicken Enchiladas with Tomatillo cream sauce

These was a very easy dish, and was not any more work than putting together a stew. Its a south of the border comfort food. I made the Tomatillo Cream sauce in the morning, so it was one less thing to fool with at dinner time. It might seem lengthy if you made it all after a long day a work. This dish was intended for a party, so as I did just cut everything in half for 6 servings. This is as easy as throwing Tacos together, and tasted much better!

Southwestern Steak Sandwiches

This sandwich is a twist on a classic italian beef sandwich, and if you like a little heat its a great one! Remember when cooking a flank steak less time is better, so when it says 3 to 4 minutes as the cooking time its true. When cutting a flank steak cutting against the grain in small thin strips. You want the meat to have the thin-ness like the real italian beefs. The preparation takes longer than the meat does. I cooked the steak three minutes. Serve this with a spinach salad. :icon_big

Black Bean Soup

This is another cold weather comfort food (if you live in the mid-west, thats now started). When I think of comfort foods its normally foods my mom prepared when I was a young child. This does not fit in that catagory, but after a long chilly day this is what I enjoy. A hot bowl of soup and warm bread and butter, a salad will be thrown in to say I've had my veggies (and not feel so guilty for the bread and butter). Oh Miss Paula, keep coming up with great reciepes like this one!

Baked Fish Sticks

This was a GREAT meal.....and I don't even like fish! I'm trying to eat more well-rounded meals, with plenty of vegetables and I really have been following this plan. Along with this tilapia I served it with sweet potatoes and roasted asparagus. Tilapia is a non-fishy tasting dinner, and I can see trying it many ways. If I lived on a coast like Miss Paula does I'm sure fish would taste better, that would be great to walk down to the water-front every time you wanted to prepare a meal.

Chicken Spaghetti

This was a wonderful alternative to the usual hamburger (or italian sausage) in tradtitional spaghetti. This reciepe was too much, Miss Paula must cook for a big group with almost all her reciepes. So this this a great change up for a Sunday afternoon football game, or simply cut all the ingredients in half. This was another reciepe where I ran up to the local market and purchased one of those rotisserie chicken and used the meat from that. It clears up a lot of time.

Quick and Easy Chicken Pot Pie

Wow you can be busy all day and come home and still prepare a nice home cooked meal. For a house full or just one, this meal has great taste and easy plus it will make great left-overs. With the real fall season upon us chicken pot pies are a real "comfort food". Served with a tossed salad and a glass of white wine, not much else is needed. Potato Soup with Shrimp

This soup was a great fix for an all day cooked flavor, that I actually made in the morning and kept in the crock pot. Served this with a spinach salad and a warm loaf of french bread (thats always my husbands idea...he loves warm bread with every meal.) The only thing added about one hour before serving was the shrimp (cooked already) one negative in living in the mid-west is fresh fish is never very fresh. With the cold air upon us this is a great fall soup to add to your reciepes.
